Rockfish in July.  I wonder if I'm mistaken about the seasonality of rockfish.  I thought we only got those around here in colder months.  For sure, that's when local fishers go out and get em.  Then again, I see rockfish at all of the other fresh fish markets.  Wonder from where it comes... Oh well. Since cow digestion accounts for 75 percent of the methane produced by animals. I smoked the ribs uncooked, just rubbed.  Bluefish are also really good smoked, and obviously salmon, but that's a whole different technique - curing and cold smoking. I also used hickory, but apple wood is a great wood for ribs if you can find it easily.  Do you smoke your ribs uncooked or do you par cook in an oven?  I absolutely agree that good ribeye needs only kosher salt and pepper.  It's my favorite steak.  Have you seen the Cooks' Illustrated video on why you need to salt them 45 minutes prior to grilling?  I like smoking ribeye with hickory or mesquite...have not done that in too long.  Need to get back to fish.  My favorite has always been trout.  Never have done a chicken, though.  Boy, howdy!
